Cook time: 15 mins | Prep time: 10 mins | Serves: 4

Ingredients.

  • 1 litre chicken stock, store-bought or make CK chicken broth recipe.

  • 2 cups poached chicken, shredded (approx. 2 chicken breast fillets) CK poached chicken recipe

  • 1 bunch broccolini, 1cm finely diced

  • 1 cup jasmine rice

  • 2 free-range eggs, lightly whisked

  • salt and pepper

Garnish

  • 1/2 lemon, juice


Method.

1. Place a medium saucepan on medium to high heat. Add chicken stock and bring to a simmer. Simmer for 1 minute.

2. Add rice and simmer for 8 minutes. Add chicken, broccolini and simmer for 2 minutes or until rice is cooked.

3. Take off the heat and add the eggs. Stir the eggs through and place a lid on top to hold in the heat. The residual heat will cook the eggs. Sit for 4 minutes.

4. Serve with extra virgin olive oil, squeeze of lemon juice, salt and pepper.
