One-Pan Beef and Mozzarella Tortilla Bake.
Cook time: 25 mins | Prep time: 20 mins | Serves: 4-6
Ingredients.
3 tablespoons olive oil, extra to serve
800 g lean beef mince
1 medium onion, dice
2 carrots, peeled, dice
3 stalks celery, dice
1 long red pepper, dice
2 truss tomatoes, grated (with cheese grater), skin discarded
3 garlic, mince
1 teaspoon paprika
1 teaspoon cumin
12 flour tortillas, (13 cm diameter)
3 shallots, finely sliced
250 g shredded mozzarella
Sour cream to serve
Basil leaves to serve
Salt and pepper to taste
Method.
1. Preheat the oven to 180ºC (200ºC fan). In a large 30 cm ovenproof pan add 1 tablespoon of oil and beef mince. Brown on medium to high heat for 6-8 minutes. Remove mince from the pan.
2. Turn heat to low - medium and add 1 tablespoon oil, onion, carrots, celery, pepper, garlic, salt and pepper. Add ¼ cup of water and soften vegetables for 5 minutes with the lid on, stirring throughout. Stir through grated tomato and spices for 2 minutes.
3. Turn off the heat and add the beef mince with resting juices. Stir through to combine and remove mixture from pan. Add remaining olive oil into the pan and set aside.
4. Lay out tortilla’s and generously pile up beef mixture into the centre of each tortilla. Lift each tortilla from both sides and place, upright, in a circular pattern back into the pan (using a cup to hold tortilla’s up) . Repeat until the pan is full and sprinkle over shallots and mozzarella.
5. Bake for 10-15 minutes until golden and serve with basil leaves, sour cream generously dolloped on top (extra to serve) and olive oil.
