Marmalade and soy glazed ham.


Cook time: 1 hour 30 mins | Prep time: 20 mins | Serves: 15-20

Ingredients.

  • 1 cup orange marmalade, store-bought

  • 1/2 cup Chinese cooking wine

  • 1/3 cup soy sauce, use gluten free if preferred

  • 1 (7-8kg) whole leg ham, skin removed

  • 2 cups water


Method.

1. To make the glaze, combine the marmalade, Chinese cooking wine and soy sauce in a medium saucepan. Bring to a gentle boil, then reduce the and simmer for 8 minutes, or until slightly thickened.

2. Preheat the oven to 160°C fan. Score the ham fat in 1 - 1.5 cm intervals, running the knife across the surface to create even lines. Place the ham in a large baking dish.

3. Bast/spoon half the glaze over the ham. Add the water to the base of the tray.

4. Cook for 80 minutes, basting every 20 minutes with the remaining glaze and the tray juices, until the ham is glossy and caramelised.

5. Rest for 10 minutes before slicing. Serve sliced ham with the warm pan juices poured over the top. This is essential!

Tips for a Perfect Glazed Ham

• Bring the ham to room temperature before roasting for even cooking.
• Reserve the removed skin to cover leftover ham, it helps lock in moisture.
• Keep 2 cups water in the roasting tray to prevent drying and allow for easy basting.
• Score the fat evenly so the glaze can penetrate and caramelise.
• Pour warm pan juices over sliced ham.
• Wrap the bone in baking paper, then cover with a linen napkin and ribbon for a polished, festive finish.
