Cook time: 30 mins | Prep time: 5 mins | Serves: 2

Ingredients.

  • 2 x 300g chicken breast fillets

  • 3/4 cup tinned corn kernels

  • 1 small garlic, minced

  • 50g cream cheese

  • 1 tablespoon of chives, chopped

  • salt and pepper

  • olive oil


Method.

1. Preheat the oven to 180°C fan forced (350°F) and get a baking dish (27cm x 20cm) lined with parchment paper.

2. In a bowl place cream cheese, corn, garlic and chives. Mix well to combine.

3. Slice the chicken breast fillet through the centre with one side still attached so the fillet opens on one side only.

4. Evenly spoon the cream cheese mixture onto one side of the breast fillet and then pull the top half over the mixture to encase cream cheese mixture. Repeat with the other chicken breast fillet.

5. Place both fillets in the baking tray. Season with salt and pepper with a drizzle of olive oil on top. Cook uncovered for 30 minutes until the fillet is cooked.

Serve with salad.
