Cook time: 25 mins | Prep time: 10 mins | Serves: 2

Ingredients.

  • 2 x 250g chicken breast fillets

  • 2 tablespoons basil pesto

  • 6 bocconcini balls, mini

  • 4 slices prosciutto

  • salt and pepper


Method.

1. Preheat a 180°C fan forced (350°F) oven. Line a baking tray.

2. Slice through the centre of the chicken breast leaving one side attached. And place on the lined baking tray. On one side of the chicken evenly spread the basil pesto. Add 3 bocconcini balls and 2 prosciutto slices onto each chicken.

3. Fold the other side of the chicken breast over the filling and drizzle with olive oil, salt and pepper.

4. Bake for 25-30 minutes. Serve with a side salad.

Serve with my Nashi pear, stracciatella and fried caper salad.
