Cook time: 35 mins | Prep time: 20 mins | Serves: 10

Ingredients.

  • 1kg rolled oats

  • 170g puffed rice

  • 2 tablespoons of cinnamon

  • 1/2 cup of coconut oil, melted

  • 1 cup of date syrup (can use honey)

  • 150g coconut flakes

  • 150g pitted dates, roughly chopped

  • 150g dried apricots, roughly chopped

  • 1/2 cup chia seeds

  • 1/3 cup sunflower seeds

  • 1/2 cup pepitas

  • 1/3 cup Psyllium Husk


Method.

1. Preheat oven to 160°C fan forced (320°F). Get two deep large baking trays. Add in oats, puffed rice, cinnamon, coconut oil, date syrup and a pinch of salt. Mix through to combine. If you don’t have deep baking trays, mix in a large bowl then distribute onto lined baking trays.

2. Bake for 35 minutes, stirring in between.

3. Once golden brown, take out of the oven and add coconut flakes, dates, apricots, chia seeds, sunflower seeds, pepitas and psyllium husk.

4. Mix through to combine, let cool, and decanter into an airtight glass jar or container.

Serve with coconut yoghurt and fresh fruit.
