Cook time: 20 mins | Prep time: 5 mins | Serves: 2

Ingredients.

  • 1 cup brown rice, medium grain, good quality

  • 1/2 teaspoon cooking salt

  • 6 cups of water

  • 2 tablespoons of butter, optional.


Method.

1. In a large 24cm wide saucepan add the brown rice.

2. Fill the saucepan with 6 cups of cold water. Add 1/2 teaspoon of salt.

3. Bring up to a light simmer on medium heat and simmer lightly for 20 minutes.

4. Once cooked, the grains should be tender to eat. Drain the rice in a colander. Shake well to discard excess water. Place cooked rice back into the dry saucepan.

5. Place the lid on and let it sit on the stovetop (burner off) for 5 minutes to absorb any excess water and go fluffy.

6. Stir through a tablespoon or two of butter and serve with The Cordony Kitchen Chicken Marbella
