Cook time: 30 mins | Prep time: 15 mins | Serves: 5

Ingredients.

  • 1 pink lady apple

  • 2 sheets puff pastry, 24cm x 24cm square

  • 1 tablespoon coconut sugar


Method.

1. Preheat oven to a 180°C fan forced (350°F). Line a baking tray with parchment paper.

2. Peel and core the apple, then slice it into 5 even rounds. Lay one sheet of puff pastry down and evenly spread the apples out leaving a 2 cm space between each apple.

3. Place the remaining puff pastry sheet over the top of the apples. Gently press around the apples with your hands.

4. Cut a 1cm border around the apples. Gently pleat the pastry border around the edge of the encased apple.

5. Place apple tarts onto the baking tray, sprinkle coconut sugar on top and bake for 30 minutes. Serve straight away. with custard.
