Cook time: 30 mins | Prep time: 10 mins | Makes: 3 liters

Ingredients.

  • 150g turmeric, fresh, roughly chopped

  • 200g ginger, fresh, roughly chopped

  • 1 lemon, sliced

  • 1 tablespoon black peppercorns

  • 1/2 cup apple cider vinegar

Serve:

  • manuka honey


Method.

1. In a 1. In a 28cm casserole pot add the turmeric, ginger, lemon, peppercorns and apple cider vinegar. Fill the pot up with water.

2. Bring it up to a light simmer. Simmer on low for 30 minutes.

3. Let tonic steep until completely cool or refrigerate overnight and then decanter.

4. Serve tonic with 1:1 ratio of water and 1 teaspoon of manuka honey.

TIP: I buy fresh ginger and turmeric when they are in season and store in the freezer. Grate directly from frozen or cut up after 10 minutes at room temperature.
