Cook time: 2 mins | Prep time: 10 mins | Serves: 4

Ingredients.

  • 110g goats cheese

  • 1/2 tablespoon chives, finely chopped

  • 1/2 tablespoon mint, finely chopped

  • 1/2 tablespoon parsley, finely chopped

  • 1 small garlic clove, minced

  • cracked pepper to taste

  • 1 tablespoon extra virgin olive oil, extra to garnish

  • 2 bunches broccolini, ends trimmed, thick stalks halved lengthways

  • 1/3 cup sliced almonds, toasted


Method.

1. In a bowl, add goat's cheese, chives, mint, parsley, garlic, pepper and olive oil. Mix well to combine with a fork. Set aside.

2. Bring a pot of salted water to the boil. Add broccolini to the pot and simmer for 3 minutes. Drain and place on a serving platter.

3. Dollop herb goats cheese onto veggies while still warm. Top with toasted almonds and extra olive oil

COOKING NOTES: Dollop herb goats cheese over any blanched vegetable i.e. beans, mix through kale, spinach or on top of roasted carrots.
