Cook time: 1 hour 15 mins | Prep time: 10 mins | Serves: 6

Ingredients.

  • 1 brown onion, finely diced

  • 4 stalks of celery, finely diced

  • 2 carrots, finely diced

  • 2 tablespoons olive oil

  • 2 teaspoons tikka masala paste

  • 1 teaspoon paprika

  • 1 teaspoon cumin powder

  • 1 teaspoon coriander powder

  • 2 cups French lentils/puy lentils (rinsed)

  • 2 bay leaves, dried

  • salt and pepper

    To serve

  • 1 lemon, juice

  • drizzle chilli oil

  • 1 cup plain yoghurt

  • 1/2 cup chives, roughly chopped

  • 1 cucumber, roughly sliced


Method.

1. Get a large pan on medium heat and add olive oil, onion, celery, carrots and a good pinch of salt. Cook for 10 minutes.

2. Add the tikka masala paste, spices, lentils, 6 litres of water and bay leaves.

3. On low to medium heat, bring to a simmer. Simmer lightly for 15 minutes with no lid. Then 50 minutes with the lid, stirring throughout.

4. Take off the heat and let sit for 5 minutes.

5. Add lemon, chilli oil, yoghurt, chives and cucumber.
