Cook time: 55 mins | Prep time: 15 mins | Serves: 3

Ingredients.

  • 1 onion, diced into 2cm pieces

  • 1 garlic, finely chopped

  • 2 carrots, diced into 2cm pieces

  • 2 celery, diced into 2cm pieces

  • 1 cup dried fava beans, rinse first

  • 1 teaspoon tomato paste

  • 1 teaspoon cumin

  • 1 teaspoon smoked paprika

  • 1 teaspoon turmeric

    To serve:

  • dukkah, parsley, and chilli oil


Method.

1. In a saucepan add onion, garlic, carrots, celery, olive oil, salt, and pepper. Sautee for 5 minutes.

2. Add the tomato paste, fava beans and spices then stir. Add 1 litre of water and stir.

3. Simmer on low to medium heat for 50 minutes. Add another 200ml of water halfway through the cook and stir frequently. If it gets too thick add a dash of water.

4. Serve with dukkah, chilli oil and parsley
