Cook time: 6 mins | Prep time: 15 mins | Makes: 15

Ingredients.

  • 3 corn cobs, kernels cut off

  • 4 free-range eggs

  • 3/4 cup chickpea flour

  • 1/2 tablespoon smoked paprika

  • 2 tablespoons parsley, finely chopped

  • 2 tablespoons chives, finely chopped

  • 1 tablespoon olive oil

  • salt and pepper

    Garnish

  • smoked salmon, cream cheese and leftover chives


Method.

1. In a large bowl combine corn kernels, eggs, herbs, chickpea flour, smoked paprika, salt and pepper and olive oil.

2. In a medium frying pan on medium heat add olive oil to cover the base and bring up to heat. With dessert-sized spoons, spoon corn fritters that are approximately 6cm in diameter.

3. Cook on one side for 3 minutes, flip with the two spoons and cook for another 2 minutes.

4. Serve with cream, cheese, smoked salmon, leftover chives and lemon wedges.
