Chocolate malt s’mores brownie.


Cook time: 30 mins | Prep time: 15 mins | Serves: 6-8

Ingredients.

  • 200g dark or milk chocolate buttons (I used half dark, half milk)

  • 150g unsalted butter, chopped

  • 2 free range eggs

  • ¾ cup caster sugar

  • ¼ cup malt milk powder

  • ½ cup plain flour

  • ½ teaspoon baking powder

  • ½ teaspoon fine sea salt

  • 6-7 giant white marshmallows


Method.

1. Preheat the oven to 190°C (170°C fan-forced). Lightly grease and line 25cm baking dish with baking paper.

2. Add chocolate and butter in a microwave safe bowl. Place in the microwave to melt for 2 minutes, in 1 minute intervals. Mix to combine with a spatula.

3. Add in the eggs, sugar, malt powder, flour, baking powder and sea salt. Mix until glossy and combined. Pour into the prepared dish. 

4. Bake for 25-30 minutes until the top is just set. Cut giant marshmallows into 0.5cm rounds to cover the top of the brownie. Place under the grill, for 1 minute to toast marshmallows until golden.

5. Serve immediately and enjoy.
