Cook time: 10 mins | Prep time: 10 mins | Serves: 4

Ingredients.

  • 2 tablespoons soy sauce

  • 2 tablespoons crunchy peanut butter

  • 2 tablespoons hoisin sauce

  • 80ml coconut milk

  • 200g brown rice, cooked

  • 2 chicken breast fillets

  • 1 chinese broccoli, cut large stems in half

  • 1 bok choy, cut each in half

  • 1/2 bunch of coriander

  • salt and pepper to taste


Method.

1. To make the peanut sauce add soy sauce, peanut butter, hoisin sauce, coconut milk in a bowl and mix to combine. Set aside

2. Cut the chicken breast fillets across the middle so you have four thin chicken fillets. Season with salt and pepper and add to a frypan on medium to high heat with 2 tablespoons of olive oil. Cook for 2 minutes on each side.

3. Turn the heat down to low and then add the peanut sauce with bok choy and broccoli. Place lid on top and simmer for 3 minutes.

4. Take the lid off and serve on a bed of brown rice. Add fresh coriander leaves and extra soy as needed.
