Cook time: 15 mins | Prep time: 10 mins | Serves: 6

Ingredients.

  • 6 chicken tenderloins

  • 1/2 cup Italian tomato sauce

  • 1/2 cup homemade breadcrumbs

  • 1/4 cup parmesan, grated

  • 1/2 cup fresh mozzarella, shredded

  • salt and pepper

  • olive oil

Homemade bread crumbs

  • 1 slice stale gluten-free bread

  • 2 parsley stalks, leave only

  • 1 small garlic clove


Method.

1. To make the breadcrumbs, get a food processor. Place the bread, parsley and garlic clove in. Blend to a fine crumb. Freeze for up to 3 months.

2. Preheat the oven to 180°C fan forced (350°F) and line a baking tray with parchment paper.

3. Line the tenderloins in a row. Evenly spoon over the tomato sauce, half the amount of breadcrumbs, parmesan, mozzarella and the remaining breadcrumbs scattered on top of each tenderloin.

4. Add salt and pepper with a drizzle of olive oil and bake for 15 minutes.

5. Serve with a side salad or my side of beans recipe
