Balsamic Strawberry & Buffalo Mozzarella with Crostini.


Cook time: 10 mins | Prep time: 20 mins | Serves: 4-6

Ingredients.

  • ½ small baguette, thinly sliced on the diagonal, 1cm thick slices

  • 4 tablespoons extra-virgin olive oil

  • 3 slices prosciutto

  • ½ cup macadamia nuts

  • 1 teaspoon honey

  • 2 tablespoons balsamic vinegar

  • 250 g strawberries, hulled and diced

  • ½ teaspoon cracked black pepper, extra to serve

  • 1 lime, zested

  • 1 fresh buffalo mozerella ball

  • 1 tablespoon finely chopped chives

  • sea salt flakes, to serve

  • small basil leaves, to garnish

  • balsamic glaze to drizzle


Method.

1. Preheat your skillet or grill to high heat. Arrange the baguette slices on a board, brush both sides with olive oil, and char for 4-5 minutes, turning once halfway through. Use a weight to achieve char lines. Set aside to cool.

2. Meanwhile, lay the prosciutto in a single layer on a frypan. Crisp for 2-3 minutes, turning once, or until crisp. Break into small shards once cool and set aside.

3.Turn heat off and in the same frypan add macadamia’s with honey and stir through. Residual heat will brown the macadamias. Roughly chop and set aside.

4. Combine balsamic vinegar, strawberries, lime zest and black cracked pepper and a pinch of salt. Stir and set aside.

5. On a large oval serving platter add the olive oil on the base. Place torn buffalo mozzarella onto the oil. Spoon over the strawberry mix, drizzling the liquid over the strawberries and mozzarella.

6. Sprinkle over honey macadamia’s, crispy prosciutto. chives, sea salt flakes, cracked black pepper and basil leaves. Serve immediately with crostini on the side.
