Cook time: 20 mins | Prep time: 10 mins | Serves: 3

Ingredients.

  • 600g salmon tail fillet

  • 1/2 small wombok cabbage, chopped roughly

  • 100g beans, trimmed

  • 1 bunch broccolini, stalks sliced in half if thick

  • 1/2 cup tamari

  • 2 garlic cloves, grated

  • 3cm ginger, grated

  • 1 lime, juice and zest

Garnish:

  • coriander leaves

  • salt and cracked pepper


Method.

1. Preheat oven to 180°C fan forced (350°F). Line a baking tray with parchment paper.

2. On the baking tray add cabbage to the center, Sit the salmon fillet on top of the cabbage and add the beans and broccolini around the salmon.

3. In a small bowl add tamari, garlic, ginger, lime zest and juice. Mix to combine and spoon over the salmon and vegetables. Place halved limes onto the tray.

4. Add 1/2 cup of water to the tray. Cover and bake in the oven for 10 minutes. Remove cover and cook for another 8-10 minutes or until salmon is cooked to your liking.

5. Check for seasoning, scatter coriander leaves over and serve with rice.
