Baked brie with fig and prosciutto.


Cook time: 10 mins | Prep time: 10 mins | Serves: 4-6

Ingredients.

  • 200g brie, whole wheel

  • 4 figs, cut into 1/4 wedges

  • 1 tablespoon honey

  • 50g prosciutto, thinly sliced

  • 5g thyme sprigs

  • olive oil

  • sea salt and cracked pepper

Serve with:

  • honeycomb

  • chilli flakes

  • thyme leaves

  • crackers or crusty bread


Method.

1. Preheat oven to 200°C fan forced (390°F). In a 24cm round baking tray, add the brie to the centre.

2. Lightly score the top of the brie into squares. Add figs around the brie and drizzle the figs with honey.

3. Add prosciutto and thyme sprigs on top. Drizzle with olive oil, salt and pepper. Bake for 10 minutes.

4. Discard thyme sprigs. Add honeycomb, chilli flakes and thyme leaves. Serve with crackers or crusty bread.
